Finally sun and spring temperatures! Was also time after all the rain, storm and the cold of the last few weeks. Now the days are getting longer and you spend much more time outdoors. To get you in the mood for spring, I've brought you today quite simple low carb summer rolls with crunchy vegetables and a creamy peanut dip. Quick made and really tasty.

L ow Carb Summer Rolls

For our blogger week, I've come up with a healthy and delicious spring recipe that's instantly made. There are low carb summer rolls with salad, peppers, avocado, mango and carrots and a creamy peanut dip. Everything cooked in no time! You just have to cut the ingredients for the Summer Rolls (your favorite fruits and vegetables) into strips, roll up a burrito in rice paper and mix a quick dip.Deliciously fruity and fresh.

Portions : 10 Summer roles

Ingredients
  • 10 small rice paper sheets
  • 1 Handful salad
  • 1 red Pepper
  • 1 Avocado
  • 1 small mango
  • 1 carrot
  • fresh herbs at will eg Mint and Coriander
For the peanut dip:
    5 EL Peanut
  • 1 EL light soy sauce
  • 1 EL Maple Syrup
  • 3 EL water
  • 1 Lime Juice
Instructions
  1. Wash the lettuce. Peel carrots, avocado and mango.Let it soften for 20 seconds. Then place the rice paper sheet on a moistened piece of kitchen paper, cover with the vegetables and herbs and fold. Repeat the process for all summer rolls.

  2. Serve the summer rolls with the Ernuss dip.
