Spring I always have a great desire for fresh salads with many healthy ingredients. Salads are just the right food in warm temperatures. And for the barbecue, the healthy side dish may indeed be missing in any case :) Today I brought you a quick 10-Minuten_Salat. Perfect for the spontaneous salad hunger. My Chickpea salad with avocado, cucumber and tomato and lime-coriander dressing is prepared in no time and tastes wonderfully fresh!
Low Carb Chickpeas Salad
For my quick spring salad you only need a few ingredients and just ten minutes time ! The low carb salad with chickpeas, avocado, onions, cucumber and tomato tastes so deliciously fresh that I could really eat it all the time. For the salad dressing I used olive oil, lime juice, coriander and cumin. A fantastic combination. Slightly oriental, totally refreshing and really tasty with the crisp chickpeas.
You can prepare the salad very well the night before and take it to the office. So you can quickly have a delicious, healthy meal for your lunch break.
Grill salad or quick lunch
The healthy salad tastes great with grilled meats. But as chickpeas are very satisfying, it's also enough for me as a quick lunch without carbohydrates.
For each person, chickpea salad has just 6 Weight Watchers SmartPoints . If you use less avocado, you can certainly save a few points. I love avocados and gladly accept the points of the healthy fruit.
- 1 Avocado
- 1 small Cucumber
- 2 Tomatoes
- 1 small onion
- 200 g chickpeas glass
- 2 EL Olive oil
- 1/2 lime
- 1 EL chopped coriander
- Cumin
- Paprika
