Summertime is barbecue time, my favorite Italian pasta salad should not be missed! Because what would be the juiciest steak or the crunchiest sausage from the grill without delicious side dishes? My husband would be with a piece of meat and fresh baguette already in the seventh grill heaven. For me, the trappings of BBQs are just part of it. In addition to bread, a green salad, grilled vegetables with feta, homemade herb butter and a good bottle of wine, I love pasta salads in all sorts of variations. Yesterday we spontaneously held a small barbecue in the garden, for which I once again prepared my absolute favorite recipe - a Italian pasta salad .

The classic pasta salad with mayonnaise, meat sausage and cucumber, which we all know from our childhood, gets real competition with this light Italian version. My Italian pasta salad with arugula, dried tomatoes, pine nuts, zucchini and a fine honey mustard sauce is pleasantly light and tastes just delicious! And you know what? The super-summer salad is also cooked really fast.

Fast and easy Italian pasta salad

The preparation is totally easy and the result is really delicious.

First, the noodles are cooked. In the meantime, you can cut the dried tomatoes, dice the zucchini, wash the rocket and finely grate the parmesan. The zucchini is then sautéed in a little olive oil. The pine nuts are roasted fat-free.

Now you just have to make the dressing of olive oil, balsamic vinegar, dijon mustard, honey, salt and pepper.The delicious pasta salad with honey-mustard dressing is full of healthy ingredients such as zucchini, sun-dried tomatoes, pine nuts and rocket.Roast the pine nuts in the pan.

  • Wash the rocket and the woody ones Cut off the ends. Finely grate the Parmesan.
  • For the dressing mix all the ingredients together in a bowl, until a creamy consistency is created.
  • The noodles with the dried tomatoes, the zucchini, Put the pine nuts, parmesan and rocket in a large bowl. Carefully fold in the dressing.
  • Leave the salad slightly and season it, if necessary.
